STUFFED PEPPERS

4 Bell pepper (assorted colors)
1 lb. ground beef
1/2 cup onion, diced
2 tsp. minced garlic
1 cup cooked white instant rice
1 can petite diced tomatoes
1 can tomato sauce​​​​​​
1 cup shredder mild cheddar cheese​
Salt and pepper to taste​

​​Preheat oven to 350 degrees.  Bring a large pot of water to boil.  Cut the tops of the peppers and remove seeds and membranes.  Drop the peppers in the boiling water and cook for 10 minutes.  Drain them on paper towels

Meanwhile, brown and crumble the ground beef in a skillet.  Add onion when ground beef is about half done.  Drain off any grease.  Add garlic and simmer for 2 minutes.  Reduce heat and add cooked rice, half of the can of tomato sauce, diced tomatoes, salt and pepper.​​​  Cook until heated thoroughly.  

Spoon the ground beef mixture into each of the prepared peppers and place in an oven proof casserole dish​​.  Pour remaining tomato sauce over all the peppers.  Cover and bake for 15 minutes  Uncover and cook for another 15 minutes.  Top with cheddar cheese and cook for 4-5 minutes until cheese is bubbly.
