GRAMMA'S BEEF AND NOODLES
1 1/2 lb. beef roast
1 box Swanson's beef broth
1/2 cup flour
1 Tbs. Paprika
1 Tbs. Minced Garlic
1 bag medium Amish style noodles
Salt & Pepper
Mix flour, paprika, and minced garlic in a bowl. Coat roast
with mixture on all sides. Remove metal insert from pressure cooker, coat bottom with vegetable oil. Heat vegetable oil until a drip of water sizzles. Sear roast on all sides in hot vegetable oil. Salt and pepper generously on both sides. Lift browned roast and put metal insert back in bottom of pressure cooker. Lay roast on insert. Add 3/4 of the box of beef broth - broth should come about 1/2 way up the sides of the roast. Secure pressure cooker cover. When cooker has come up to pressure, cook for 45 minutes. Remove roast from pressure cooker - remove metal insert. Using the broth from the roast, add the remainder of the beef broth and water to fill cooker
about 1/2 full. Bring to a boil. Add noodles and cook 10
minutes. While the noodles are cooking, cut the beef in small pieces. Add beef to noodles and cook 15 more minutes - until almost all the liquid has been absorbed by the noodles. If there seems to be too much liquid, dip out excess. Salt and pepper to taste. I enjoy these plain, but some people like to add some sour cream on their plate.
