EMMA’S SPICY STUFFED PEPPERS
(Awesome - try them !!)

Assorted peppers (I prefer red peppers
  and banana peppers)
1 ½ lb bulk hot Italian sausage
1 handful of uncooked rice
1 can diced tomatoes 
Salt and pepper
1 jar of your favorite spaghetti sauce
1 large package of shredded mozzarella
cheese.
Clean peppers, cut in half, and blanch for 7 minutes in boiling water.  Lightly brown sausage in skillet.  Mix sausage, rice, tomatoes, salt and pepper in a mixing bowl. Fill peppers with mixture. Spray bottom of casserole dish. Arrange peppers in casserole dish. Cover with spaghetti sauce. Cover with foil and cook at 350 for 30 minutes. Remove foil, cover with mozzarella cheese - return to oven, uncovered - for 20 minutes until cheese is golden brown and bubbly.
