SOUTHWEST CALICO CORN
1 small red pepper, diced
1 small green pepper, diced
1 pkg frozen corn, thawed
1 can yellow hominy
1 tsp cajun seasoning
1/2 tsp ground cumin
Dash of salt and pepper
Cook peppers in olive oil in large skillet 3-5 minutes. Add frozen corn and cook on medium high heat 5-6 more minutes, strirring occasionally. Add seasoning and hominy, stir, and cook for 2-3 minutes more. Quick, easy and delicious.
