Preheat oven to 375°. Spray cooking oil on bottom and sides of a 9” x 13” baking pan. Cook ground beef in a large skillet, stirring and chopping with a spatula until crumbly and cooked completely. Drain off any grease. Add ¾ cup of enchilada sauce and 1 cup of cheese. Spoon mixture onto flour tortillas, roll up, and place in baking pan. Pour remaining enchilada sauce over the rolled up tortilla shells and top with ½ cup of cheddar cheese. Bake at 375° for 15-20 minutes.
